Almond-Poppy Muffins Recipe

A homemade recipe for delicious almond-poppy muffins:

Ingredients:

For the Muffins:
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1/2 cup unsalted butter, melted
  • 2/3 cup plain Greek yogurt
  • 2/3 cup milk
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
For the Glaze (Optional):
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon almond extract
Instructions:

Step 1: Preheat and Prepare

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.

Step 2: Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and poppy seeds. If you're using lemon zest for extra flavor, add it to the dry mixture.

Step 3: Combine Wet Ingredients

In another bowl, whisk together the melted butter, Greek yogurt, milk, eggs, almond extract, and vanilla extract until well combined.

Step 4: Combine Wet and Dry Mixtures

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Step 5: Fill Muffin Cups

Spoon the muffin batter into the prepared muffin cups, filling each about 2/3 full.

Step 6: Bake

Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs attached.

Step 7: Cool

Remove the muffins from the oven and let them cool in the muffin tin for about 5 minutes. Then transfer them to a wire rack to cool completely.

Step 8: Optional Glaze

If desired, you can prepare a simple glaze by mixing powdered sugar, milk, and almond extract until smooth. Drizzle the glaze over the cooled muffins.

Step 9: Enjoy

Once the glaze has set (if used), your homemade almond-poppy muffins are ready to enjoy! They are best when served fresh, but you can store them in an airtight container for a few days.
These muffins are bursting with almond and poppy seed flavors and make for a delightful breakfast or snack. Enjoy!
