Amish Date Nut Cake is a delightful dessert. Here's a homemade recipe for you to enjoy:

Ingredients:

For the Cake:

  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (pecans or walnuts work well)
For the Frosting:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Preheat and Prepare

Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch (23x23 cm) square baking pan.

Step 2: Prepare the Dates

In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them sit for about 15 minutes to soften.

Step 3: Make the Cake Batter

  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs and vanilla extract until well combined.
  • Gradually add the flour and salt to the mixture, mixing until smooth.
  • Stir in the date mixture, including the liquid, until evenly incorporated.
  • Fold in the chopped nuts.

Step 4: Bake the Cake

Pour the cake batter into the prepared baking pan, spreading it out evenly.

Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 5: Make the Frosting

  • While the cake is baking, prepare the frosting. In a saucepan, combine the 1/2 cup of unsalted butter, packed brown sugar, and milk.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Remove from heat and stir in the vanilla extract.

Step 6: Frost the Cake

As soon as the cake is done baking and while it's still hot, pour the hot frosting evenly over the top of the cake.

Step 7: Cool and Serve

  • Let the cake cool in the pan on a wire rack.
  • Once the cake has cooled and the frosting has set, you can cut it into squares and serve.

This Amish Date Nut Cake is a wonderfully moist and sweet treat, perfect for dessert or an afternoon snack. Enjoy!
