Apple Bran Muffins Recipe

Homemade recipe for Apple Bran Muffins: Ingredients:

  • 1 cup of whole wheat flour
  • 1 cup of wheat bran
  • 1/2 cup of brown sugar (you can adjust this based on your sweetness preference)
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/2 cup of unsalted butter, melted
  • 2 large eggs
  • 1 cup of unsweetened applesauce
  • 1 cup of grated apples (about 2 medium-sized apples)
  • 1 teaspoon of vanilla extract
  • 1/2 cup of chopped walnuts or pecans (optional)

Instructions: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners. In a large mixing bowl, combine the whole wheat flour, wheat bran, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix these dry ingredients together. In a separate bowl, whisk together the melted butter and eggs until well combined. Then add the applesauce, grated apples, and vanilla extract. Mix until everything is incorporated. Pour the wet mixture into the dry mixture and stir until just combined. Be careful not to overmix; a few lumps are okay. If you're using nuts, fold them into the batter at this stage. Spoon the batter into the muffin cups, filling each about two-thirds full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Enjoy your homemade Apple Bran Muffins! These muffins are a healthy and delicious choice for breakfast or a snack. Feel free to customize them by adding raisins or other dried fruits if you like.
